Zucchini with Pine Nuts and Orange

A great way to use up zucchini (which can be a tad boring). Impressive, tasty and excellent to serve up at dinner parties.

  1. Fry onions in oil for 1 minute then add zucchini and stir-fry for 2 minutes Add all the remaining ingredients, and toss over a high heat until most of the juice is evaporated.
