A great way to use up zucchini (which can be a tad boring). Impressive, tasty and excellent to serve up at dinner parties.
- 6 -8 spring onions, trimmed and finely chopped
- 2 tablespoons olive oil
- 350 g zucchini, sliced
- 1 tablespoon pine nuts, toasted
- 1 orange, juice and finely grated rind of
- 2 tablespoons fresh dill
- Fry onions in oil for 1 minute then add zucchini and stir-fry for 2 minutes Add all the remaining ingredients, and toss over a high heat until most of the juice is evaporated.
Enjoyed this as a nice variation to zucchini recipes in general! The dill, the pine nuts, the orange ~ all combined to make a nice seasoning combo! [Tagged, made & reviewed in Healthy Choices ABC cooking game]
