A good way to use up the extra zucchini in the fall months. This is from a WalMart staff cook book. A healthy cookie.

  1. Cream margarine and add sugar.
  2. Beat in egg and lemon peel.
  3. Add dry ingredients alternately with milk.
  4. Add zucchini and raisins.
  5. Drop by spoonfull onto greased cookie sheet (if using non stick pans omit grease).
  6. Bake at 375 degreesF for about 14 minutes.
