A very simple way to use zucchini. It can be served over noodles, rice or eaten alone.

  1. Peel the zucchini, leaving alternating strips of the skin on.
  2. Cut the zucchini, onion, mushrooms, tomato and the string cheese into large bite-sized pieces.
  3. Coat a frying pan with the non-stick cooking spray and place on high heat. Cook the zucchini and the onion until lightly brown and tender-crisp. Add the mushrooms and continue cooking until they're warmed through. Stir often. Crush the tomato pieces into the pan and heat until hot and juicy. Add the salt, pepper, cayenne pepper, and garlic powder during the last minute of cooking. Remove from heat and stir in the string cheese.
