Quick easy, tasty spread
- 1 cup grated and drained well raw zucchini
- 1 cup grated sharp cheddar cheese
- 3⁄4 cup reduced-calorie mayonnaise
- 1⁄2 cup chopped walnuts
- 1 teaspoon lemon juice
- Combine all the ingredients.
- Refrigerate for several hours.
- Serve with crackers or bite size raw veggies.
yummy. i salted and drained the zucchini. i used pecans instead because it was what i had. i served it with deli crackers and some fresh veggies.
