This is a really nice topping for steak, and the leftovers make a delicious topping for toasted English muffins.
- Heat oil in a pan.
- Add the onion, cook for about 1 minute.
- Add the zucchini, cook for 1 minute.
- Add the tomatoes, reduce heat, and simmer for about 30 minutes, or until all the vegetables are tender, and the mixture has a chunky sauce type consistency.
