I needed to use some zucchini up, so I used what i had on hand and sounded good. Turned out great, so I wanted to put it on here so I wouldn't forget what I did.

  1. Cut zucchini and carrots in 2" long strips, about 1/4" wide.
  2. Cut onion the long way into strips.
  3. Stir fry the carrots, onion and garlic in hot olive oil until carrots are crisp-tender.
  4. Add zucchini and stir fry until vegetables begin to brown, adding seasoning to taste.
