I made this twice, once with fresh zucchini and once with frozen. What a difference fresh makes. It is soggy with frozen, with fresh it was very good. I liked it cold in a pita.
I'm sorry that I couldn't rate this with more stars. I used zucchini that I had shredded from the garden from this Summer and froze. I also had to scale it down for 1 serving. I love everything that went into this recipe but I suppose just not together. Made for My 3 Chefs '08.
