An easy party dish out of my archives.
- 3 cups thinly sliced zucchini
- 1 cup Bisquick
- 1⁄2 cup grated parmesan cheese
- 1⁄2 cup diced onion
- 2 tablespoons parsley
- 1 teaspoon oregano or 1 teaspoon marjoram
- salt and pepper
- 1 garlic clove, chopped
- 4 eggs
- 1⁄2 cup canola oil
- Heat oven to 350°F.
- Grease a 13x9x2-inch pan.
- Mix all ingredients, spread in pan.
- Bake until golden brown, approx 25 minutes.
- Cut into squares.
I fixed this for a family dinner with ham and new potatoes and everyone loved it! Has kind of a batter fried zucchini taste with much less fuss. Thanks!
Chia, as usual, this recipe of yours is fantastic! I used my mandoline to slice the zucchini as thin as I could get it. I used oregano and added enough s&p to suit our taste. The rest of the recipe I followed exactly. I always know when I select a Chia recipe, it's risk proof. ; ) Thank you!
I enjoyed this recipe! The rest of my family isn't too crazy about zucchini, but I thought it was really good!I used olive oil in place of canola oil and used oregano. I actually used 2 garlic cloves and put just a little mozzarella cheese in with the Parmesan. Delicious! Thanks!!! I did have to add a little salt.
