Made for Dining on a $ Contest 2011. Mike and I really enjoyed these burgers. I did NOT tell him that zukes were involved as he is tired of the green monster. lol What a great way to stretch the beef in this recipe! Who knew a "mexican" burger had so much flavor. We did like the sauce but next time I will reduce the may amount as we had more than enough to go around plus some and perhaps the other flavors will pop a bit more. This is one fine burger and we will definitley make tis again as I have zukes coming out the seams in the garden and freezer.   1. Combine ground beef, bread crumbs, egg, zucchini, salsa, onion, chili powder, and cumin. Shape into 4 patties and refrigerate for at least 30 minutes.
  2. Make sauce by combining mayo, salsa, mustard, chili powder, and cumin in a small bowl.
  3. Cook burgers on a gas grill (oiled) or George Foreman Grill until done to your liking, about 4-5 minutes per side.
  4. Toast buns, if desired.
  5. Spread bottom bun with sauce, top with burger, cheese, and toppings of your choice. Spread more sauce on top bun and put on burger. Serve with dill pickles and french fries or potato chips.
