Zucchini Rounds

  • In a mixing bowl, stir together biscuit mix, cheese and pepper. Stir in beaten eggs just until mixture is moistened. Press the liquid out of the zucchini in colander and then fold into the other ingredients in the mixing bowl. In 10" skillet, melt margarine over medium heat. Using 2 tablespoons of mixture for each round, cook four rounds at a time for 2-3 minutes on each side (or until brown). Keep warm while cooking remaining rounds.

  1. Very yummy! I followed your recipe exactly except that I added some garlic powder and salt to the mixture. Also, I would suggest after grating the zucchini to squeeze the liquid out of it. I just used a couple of paper towels and pressed the zucchini until most of the liquid was absorbed. We had these with hamburgers and it was a great side-dish!
