Zucchini Pizza

"One more zucchini recipe. This can be a main dish, side dish, or served cold as a snack. When zucchini are in season, we used to eat this at least once a week. It was one of the first recipes I received from friends when I started in the working world many years ago."

  1. First of all, I have NO idea why this dish is called Pizza. There's nothing resembling pizza about it - maybe because it has pepperoni? The texture is kind of like a bread. Prep time was must more than 20 minutes for us - there's a lot of chopping and measuring to do. Overall, we thought it was OK, but not worth the effort. It might be better with sausage instead of pepperoni, and served with brunch.

  2. My entire family loved this dish. After baking it for about 50 minutes, I pulled it out of the oven, spread pizza sauce over the top and sprinkled it with a little shredded mozzarella. I'm sure you could use cooked sausage in place of the pepperoni (or half and half pepperoni and sausage) depending on what your family likes on their pizza. Very easy, nice on a busy day.
