Zucchini Pizza

One more zucchini recipe. This can be a main dish, side dish, or served cold as a snack. When zucchini are in season, we used to eat this at least once a week. It was one of the first recipes I received from friends when I started in the working world many years ago.

First of all, I have NO idea why this dish is called Pizza. There's nothing resembling pizza about it - maybe because it has pepperoni? The texture is kind of like a bread. Prep time was must more than 20 minutes for us - there's a lot of chopping and measuring to do. Overall, we thought it was OK, but not worth the effort. It might be better with sausage instead of pepperoni, and served with brunch.

  1. In large bowl, mix together oil, eggs, bisquick, romano cheese.
  2. Add all other ingredients in no particular order.
  3. Spread into a greased 13 x 9 pan.
  4. Bake 1 hour at 350 degrees.
