It's almost zucchini time!!!!! I believe this is a recipe from These are great served with sour cream on the side for dipping.

  1. Drain zucchini well.
  2. Mix all ingredients to a potato pancake-like consistency.
  3. Heat oil or butter in frying pan.
  4. Drop 2 tablespooons batter per pancake into pan.
  5. Press down lightly to flatten.
  6. Fry until golden brown on both sides.
