I got this recipe from my mom who used to make these when I was growing up.
- 2 eggs, separated
- 2 cups zucchini, peeled & grated
- 1⁄2 cup flour
- 3⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- Beat egg whites until stiff, but not dry.
- In separate bowl, mix egg yolks, zucchini, flour, salt & pepper.
- Stir in egg whites.
- Cook and serve with maple syrup.
