Zucchini Packets for the Grill

Thanks to my fellow Zaar chefs for the inspiration for this recipe! I came up with this recipe based on all of your suggestions in the message forums! YUM!

• Total Time: 40 mins
• Prep Time: 15 mins
• Cook Time: 25 mins

Ingredients:

Servings: 4

• 3 cups chopped zucchini
• 2 ripe tomatoes, chopped
• 1 small onion, sliced
• 2 cloves garlic, mashed
• 1/2 teaspoon oregano
• 1/2 teaspoon basil
• salt and pepper
• 2 tablespoons olive oil

Directions:

1. Combine all ingredients in a large bowl--toss to coat everything.
2. Place in foil packet, seal well.
3. Grill 25 minutes or until tender, turning every so often.
4. These could be done in the oven as well: Bake at 375º for 25 minutes, or until tender.

I made this this weekend as part of my bratathon. I loved the recipe! super easy to make and so flavorful. I love zucchini, tomatoes, and onions. I will be making this a lot.

This was a big hit at the pool party today. I did add yellow squash and mushrooms. It took a bit longer to cook but was worth the wait. It looked nice and tasted even better.

CG, you have got a winner with this recipe. My husband and I love to grill. We put these packets on the grill with the chicken and the vegetables turned out fabulous. Took about 30 minutes to cook. Yummy Italian seasonings, too. This was easy to make which is always a good thing. Thanks for sharing your creation.
