Suppoused to be used as a side dish, I end up eating so much it's usually my main course. Simple, Fast, Healthy, Delicious.
- Place all ingredients into a large pot and keep medium-low heat until veggies are tender.
- The veggies lose water resulting in a 'soupy' mixture as it mixes with the tomato sauce.
- Serve hot.
This certainly is an easy recipe to make, & although the resulting soup is fairly tasty, I did add 1/8 teaspoon of lemon pepper! [Tagged, made & reviewed for one of my adoptees in the current Pick-A-Chef]
