This is just your basic zucchini muffin recipe, but I adapted it to make it lower in fat. My kids love this.

  1. Mix egg beaters and vanilla, beat until well blended. Add Cinnamon, nutmeg, flour, oil, zucchini to egg mixture and beat well. Add sugar, baking soda, salt and baking powder, blend well. Bake at 350 for 15 to 20 minutes. Makes 30 muggins.
