      Really enjoyed this recipe! Muffins came out great. I used about 2/3 of the requested sugar and just eyeballed the spices, but the mini muffins I made still came out flawless.

      Amazing recipe. I used all whole wheat flour though, and took the other suggestion on using pumpkin pie spice for the nutmeg. I also used Stevia for 1.5 cups and then brown sugar for the other 0.5 cups. Delicious!!! Very moist and the sweetness was of perfection.

      WoW! These are sooo yummy! Made the muffins, I used walnuts AND raisins :) and I sprinkled a little cinnamon sugar on top of the batter before baking. I will be making these ALL winter with the tons of shredded zucchini I froze from our garden. Thanks for posting a winning recipe! ~Andi :)

      I added the zest of one orange and also instead of the nutmeg added pumpkin pie spice, other wards followed the rest of the ingredients. I also squeezed the juice out first with paper towel. These are great moist yet light and fluffy, This recipe made 25 muffins each about 1/4 cup batter. Will make this again and again.

      this was awesome, I had never had Zucchini let alone Zucchini bread and I was pleasantly surprised. I used only 2 cups of grated zucchini and made 3 loaves instead of the muffins but it was still awesome I will definately make it again and share the recipe. Thanks, Ericka

      My neighbor gives us zucchini so I found this recipe on the computer. Everyone who has eaten my zucchini bread raves it is the best they ever had, including the man who grows the zucchini. You did not mention squeezing the juice out with cheesecloth but I do this. Everyone is always asking for more, it is an easy recipe and very very delicious!!

      EXCELLENT!! I didn't have any allspice so I used 1tsp cinnamon fresh nutmeg. It made 24 perfect muffins!! I will make this recipe alot. Try this recipe and you wont search again for another (I promise)!!!!!
