This is my mom's recipe and our family loves it. All the different spices give this lots of flavour and the zucchini makes it really moist.
- Mix the eggs, sugar, zucchini, oil and vanilla together.
- Add the remaining ingredients and combine.
- Pour into greased pans.
- Bake in 350°F oven:.
- 2 loaves 50-60 minutes.
- 24 muffins 25 minutes.
Really enjoyed this recipe! Muffins came out great. I used about 2/3 of the requested sugar and just eyeballed the spices, but the mini muffins I made still came out flawless.
Amazing recipe. I used all whole wheat flour though, and took the other suggestion on using pumpkin pie spice for the nutmeg. I also used Stevia for 1.5 cups and then brown sugar for the other 0.5 cups. Delicious!!! Very moist and the sweetness was of perfection.
WoW! These are sooo yummy! Made the muffins, I used walnuts AND raisins :) and I sprinkled a little cinnamon sugar on top of the batter before baking. I will be making these ALL winter with the tons of shredded zucchini I froze from our garden. Thanks for posting a winning recipe! ~Andi :)
