  • Blend the Bisquick, parmesan, salt, pepper.
  • Add eggs.
  • Mix zucchini into batter.
  • Grease hot pan or griddle with butter.
  • Pour batter into pan and fry 3 minutes on each side.
  • Serve warm, a delicious way of serving zucchini.

  1. Just terrific. I'm trying to restrict my salt use, so I omitted the salt and added an ample amount of seasoning mix. I also let them cook a bit longer than 3 mins per side as I liked them real crisp. This is a keeper and a fun way to use up some of that extra zucchini.
     
  2. Delicious!! I was a little weary that it would be too heavy because of the frying, but they were light and crispy on the outside and soft on the inside. These were perfect for zucchini sliders! :)
     
  3. Delicious! Made twice and opted for organic zucchini. Tip: Squeeze out the excess water in a clean kitchen towel after grating before mixing with batter. Add extra cheese and diced green onions. Instead of butter used canola oil for frying.
     
  4. It's a good recipe but we found that it needed something. And I added more parmesan cheese. Maybe some finely chopped garlic could be great. Or some herbs. I used recipe#381055 for the Bisquick. Thanks newspapergal :) Made for All you can cook buffet

Tweaks

  1. Added 1c grated carrot, chopped red onion, minced garlic, and a bit of fresh thyme in place of 1c of zucchini. Mixed a box of bisquick and wheat bisquick just because I was running low, but actually like that. It was less breakfast-y and more hearty tasting. Squeezed all moisture from carrots and zucchini before assembling patties. Served with a yogurt mint dipping sauce. Baked on panini grill instead of frying. Fresh grated Parmesan and gruyere instead of that shelf-stable canned white powder of despair.
     
  2. These were easy and quite good. I added chopped scallions and lemon pepper and used CarbQuik low carb baking mix instead of Bisquick. They're now an official entry 'in the rotation!' Thank you!
