My husband is never very eager to try new things especially if he remembers it from his childhood. Had this wonderful zucchini bought at the famer's market and was really wanted to use it. He liked potato pancakes so I thought "just maybe". These were a hit.

Ingredients Nutrition


  1. Dice mushrooms and saute with a small amount of olive oil in small frying pan until liquids evaporated.
  2. Cool slightly and place in bowl.
  3. Add zucchini, cheddar cheese, green onion, eggs, flour and salt & pepper to mushrooms in bowl.
  4. Stir until mixed.
  5. Heat small amount of olive oil in small frying pan and add 2 heaping tablespoons of ingredients per mound.
  6. Cook until browned on one side before flipping.
  7. Continue cooking for about 2 minutes.
  8. Serve with a smear of sour cream if wanted.
