I'm a huge hummus fan, and this dip tastes similar to hummus, thanks to the tahini. Very addictive!
- 2 medium zucchini, unpeeled, cut into chunks
- 1⁄4 cup olive oil
- 4 -8 garlic cloves
- 2 teaspoons salt
- 1⁄2 cup lemon juice
- 3⁄4 cup tahini
- 1⁄4 teaspoon red pepper flakes
- 1 teaspoon cumin
- Place all ingredients in a food processor, and process until desired consistency.
- Serve with tostitos, chips, or raw veggies.
