ingredients
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup vegetable oil
- 1 teaspoon vanilla
- 4 eggs, add one at a time
- 3 cups green zucchini, grated and not peeled (measure after grated)
- 3 cups flour
- 3 teaspoons baking powder
- 1 1⁄2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 1⁄2 cups chocolate chips, 3/4 of a 12oz bag
directions
- Heat oven to 375°F.
- Mix dry ingredients: flour, baking powder, soda, cinnamon, salt and set aside.
- Cream sugars, oil, and vanilla.
- Add eggs, one at a time.
- Add zucchini.
- Add dry ingredients, just until mixed, and finally fold in chocolate chips. Bake in 375F oven for 20 to 25 minute Makes about 30 large muffins or 13 Texas size.
