I followed the directions exactly but it came out a tad dry. Maybe it's my cheap electric oven? I've never been a great baker, my sister swears it's my oven. Nevertheless, everyone had seconds! Thanks!

It is a simple recipe and it turned up really good. My 19 months old had 4 of them before before to bed and I bake them in mini muffins tray.
Very nice recipe and a good excuse to plant more zucchini plants :P I was sceptical at first(veggies in cake?) but this became a quick favorite. Very rich.
As most gardeners, I had an abundance of large zucchini this summer and found this a great way to use it. I've made this about five times with rave reviews from those who've tried it. I usually add a tablespoon of instant espresso crystals to boost the chocolate flavor. The last time I made a couple of substitutions to increase the nutritional value. I substituted 1/2 cup of ground almond meal for 1/2 cup of flour and added 4 tablespoons of soy protein power. There was little difference in the finished cake - still delicious.
wow this is a great cake however I thought it could use a little more sweet so I added the cream chz icing Cream Cheese Icing (Mrs. Echard Icing) and it was fantastic!!
My kids and husband are eating vegetables, and asking for seconds, does it get any better than that? I served with ganache, and it was delicious. Thanks!
