- 680.38 g zucchini, thinly sliced
- 78.78 ml extra virgin olive oil
- 59.14 ml lemon juice
- 453.59 g boneless skinless chicken breast, cooked and warm
- 283.49 g Baby Spinach
- 1 red onion, thinly sliced
- 118.29 ml pine nuts, toasted
- 118.29 ml parmesan cheese, grated
- 59.14 ml of fresh mint, chopped
- salt and pepper, to taste
directions
- In a large bowl, whisk together the olive oil and lemon juice, adding salt and pepper to taste.
- Add thinly sliced zucchini to the bowl and toss to coat.
- Heat up chicken if cold.
- When heated, thinly slice the chicken.
- Toss the chicken with the zucchini mixture, spinach, red onion, pine nuts, cheese, and fresh mint.
- Serve and enjoy!

I like photography and cooking.
But I can never seem to get pictures of food that I truly like. Some foods just aren't photogenic, and my favorite food is one of those.
Plus, our house has bad lighting and is too cluttered for good pictures.
