Great for using up extra zucchini from the garden. This makes a tasty dish for brunch or a light supper served with a tossed salad.
- 3 cups zucchini, sliced thin
- 1 cup flour
- 1 teaspoon baking powder
- 1⁄2 cup onion, chopped
- 1⁄2 cup cheese, shredded
- 1⁄2 cup vegetable oil
- 1 teaspoon salt
- 1 dash pepper
- 4 eggs, beaten
- Preheat the oven to 350 degrees Farenheit.
- Mix all of the ingredients together and pour into 9 x 13 inch pan.
- Bake for 35-40 mins until golden brown.
This turned out great! We added two kielbasas (like hot dog length) sliced thinly. I forgot to add the cheese--so I added some at the end of baking, and that still turned out great. My one suggestion would be to mix the flour, baking powder, oil, etc. in a separate bowl, then mixing it with the zucchini, onion, and kielbasa. Definitely a good, easy recipe.
I forgot that I had tried this recipe before and rated it (the above paragraph), but we just tried it again and loved it. I didn't add anything extra, but I did grate the zucchini instead of slicing it. That seemed to make it a little easier for the kids to like. Good recipe!
This was tasty. It might be a little bland so next time I am going to add garlic to it and maybe some meat of some kind. I loved the flour crunch that settled at the bottom. I found mixing it all together at once not to be a problem. Thnks for posting.
