  • Preheat oven to 350 degrees F.
  • Sift together, flour, baking powder, baking soda, salt, cinnamon and nutmeg in a large mixing bowl.
  • Add the sugar and blend.
  • Mix the eggs with the oil and add that to the flour mixture, mix again.
  • Mix the zucchini, carrots and walnuts, add and mix.
  • Put this in 2 greased loaf pans and bake for approx 50 minutes or until done in the centre.

  1. This is a great and delicious recipe! I made it last week in a bundt pan - the only changes I made were the suggested salt reduction and I added raisins. My husband and I went through the entire loaf in 2 days! I made it again today and this time made half the flour whole wheat, added a small amount of ginger, allspice, mace, and a splash of vanilla extract. Thanks for sharing!

This made a delicious moist bread that smelt wonderful while baking and that most of all, the guys in my dad's office enjoyed this evening at a small surprise treat I gave everyone because I completed my last examination of my Masters in IT today!I used 1/4 tsp. baking powder, 1/4 tsp. salt, 3 tsps. cinnamon(ground) and 2 1/2 cups sugar instead of 1 1/2 cups since I wanted it sweeter. I omitted the nutmeg since I didnt have that on hand but I did add a pinch of allspice. Thanks for a delicious and healthy bread that used fresh fresh carrots and zucchini and a great evening treat that went very quickly with tea! The other loaf was shared between some kids and their families in my building - everyone enjoyed it! Thanks again!
     
  3. Butter instead of the oil, creamed with the sugar and eggs until Super light and fluffy. Added the flour mixture until just combined and then the zucchini, carrots and walnuts all at once. It was beautiful! For those whose bread comes out dry- make sure you’re not squeezing out or draining the carrots and zucchini, the bread needs that liquid. Also, the veggies you’re using might be older and not as juicy. Try using smaller zucchini and carrots (they’re more tender and juicy).
     
  4. I made this today with my toddler and it was delicious! The batter is very thick but it comes out soft and moist from all the veggies in it! Next time I will try reducing the sugar just a bit and maybe substitute some apple sauce for 1/2 of the oil.
     
  5. Sorry but up I had high hopes and was left with 2 dry crumbly loaves. I should have tweaked it or abandoned it after I read the reviews but thought maybe the recipe wasn’t followed correctly. I followed each step even reducing the baking time in my convection oven. Would not make again.

Tweaks

  1. I added an extra egg because my batter was more of a cookie dough consistency. I possibly did not had enough oil because I eyeballed it. Once I added the carrots and zucchini (and the extra egg before that), it was a nice, smooth consistency. I was very pleased with the results. It tasted great! Might try it with Greek yogurt added instead of oil and see how it turns out.
     
  2. Butter instead of oil, then creamed it with the eggs and sugar until very light and fluffy before adding flour and other ingredients. Also added vanilla which I never measure, maybe 1/2 tsp? Oh, and I hate nutmeg, so I left that out. Next time, I’m definitely adding raisins too.
     
  3. Applesauce instead of oil and I added extra squash and carrots.
     
  4. Excellent! I highly recommend this recipe. I used 1 cup brown sugar and 1/2 cup white. I also used butter instead of oil. And I was pretty generous with the zucchini, carrot and walnut.
     
  5. Exactly as we wanted our bread to taste! I did make some substitutions. Half oil, half applesauce and substituted raisins for the nuts since we have a nut-allergy in the house. Definitely going to use this recipe again to finish off the garden's zucchini.

Well all right then ...... My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!! It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name. My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!! I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language! I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy) Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor. Besides cooking she has other interests too, crafts, gardening and soap making. She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
