Zucchini Cakes

"This is a great recipe for 2 people! Easy to throw together and easy to make. I got the idea when I was making potato pancakes."

• Serves: 4

ingredients

• 1 1⁄2 cups shredded zucchini
• 1 egg, slightly beaten
• 2 tablespoons Bisquick baking mix
• 3 tablespoons grated parmesan cheese
• 1 dash salt and pepper
• 1 tablespoon cooking oil

directions

1. In a bowl combine zucchini, egg, Bisquick, cheese, salt and pepper.
2. Heat oil in skillet over medium heat; drop mix by 1/4 cupfuls and flatten.
3. Fry until golden brown, turn and cook on other side.
