Great taste, but I thought it was a little too moist, almost soggy. Seems to have a lesser amount of flour than some other recipes. I did replace some oil for applesauce, but I do that in all zucchini recipes and always have great results.
Great cake!My husband and kids loved it.They hate zuchinni but ate the whole pan of cake.I also put a cream cheese frosting on it.The cake is great hot or cold!Real moist and delicious!!

i a not givin 5 star coz i made a lot of my adjustments...i reduced the nuber of eggs to3 and also the oil by a half added i cup yought instead of those too felt dough was too runny so added a bit more of flour and anothe half tsp of baking powder..added a wee bit of carrot as well....i always reduce the sugar but i plan to have sugar and cinnaon topping for kids
For those of you who like carrot cake, this one's for you. It is moist and delicious. I also put a cream cheese frosting on it and it is fantastic.A great way to use us some of the masses of zucchinis that are available right now.
Wow! Just what I was looking for on this chilly fall day! I used 3 x-large farm fresh eggs, and after measuring the Zucchini, packed in a measuring cup, I squeezed the water out of it. Added a whole tsp. of baking powder. Raised great and is very moist and delicious! I frosted with my grandma's cream cheese frosting she used on her pumpkin bars. Perfect zucchini cake recipe! I used self raising flour (plus a quarter of a teaspoon of baking powder to counteract the densifying properties vegetable oil). I also added the zest of 1 orange - it came out beautifully. Many thanks for this one!
Very good! I left out the nuts b/c I don't like them.My DD and I both thought it was nummy! We'll see what DH has to say about it later. I'm not telling him it has zucchini in it or he won't even try it.LOL!!
