Zucchini Cake

For those who have ever grown zucchini...this is an excellent way to use up zucchini. It's also a way to get the zucchini-haters in your household to come over to the green side. LOL

This is a very good and easy bread. I like that with very little effort you get two nice loaves. I grated the zucchini in my food processor and from two medium-sized zucchini I got the two cups needed. I also substituted applesauce for the oil, which I always do in cakes and it was undetectable, while greatly reducing calories. My teenagers loved the chocolate chips and gave this a big thumbs up! Made for Photo Tag game.

  1. Grease 2 loaf pans.
  2. Use you preference of nuts, i.e. walnuts, pecans etc. I generally use semi-sweet chocolate chips when baking.
  3. Mix eggs, vanilla, oil and sugar; sift dry ingredients together,mix in wet ingredients until nicely incorporated. Add in zucchini,chocolate chips and nuts.
  4. Pour into loaf pans and bake approximately 45 min-1 hour at 350°F Freezes very well.
