- 3 eggs
- 1 cup salad oil
- 2 cups sugar
- 2 cups grated zucchini
- 2 cups flour
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3 teaspoons cinnamon
- 1 teaspoon vanilla
- 1 cup chopped nuts (optional)
- Beat eggs, salad oil and sugar until creamy.
- Then blend in the remaining ingredients Grease and flour Bundt pan.
- Bake for 1 hour at 350 degrees.
Wonderful recipe! Brought to work and everyone raved about it! I made a bundt cake and glazed it with a white chocolate cream cheese icing. My cake was done in 50 minutes. Will make again.
Even with some healthy changes, this cake is moist and delicious. I decreased the sugar to 11/2 cups and used 2/3 cups of ww flour in place of some white flour. Baked in a bundt pan and glazed with cream cheese frosting. My family loved it.
Very tasty! I used 1.5 cups of sugar, whole wheat flour, half applesauce, added some nutmeg, and baked in a 9 X 9 square pan (with enough batter for 4 cupcakes). Everyone agreed the cupcakes were the best - all four were gone before they had cooled enough for frosting. Will definitely bake again.
