ingredients

2 cups shredded zucchini
1 ¹⁄₂ cups sugar
¹⁄₂ cup oil
2 cups flour
1 ¹⁄₂ teaspoons baking soda
2 teaspoons vanilla
¹⁄₄ teaspoon salt
¹⁄₂ cup cocoa
¹⁄₂ cup nuts, optional

directions

Mix together, bake in greased and floured 9 x 13 pan.
Bake on 325* for 25- 30 minutes.

When I tried to spread this in the pan, it just wasn't working. So I added one beaten egg to the mix. They rose up very evenly and have a great flavor and texture. I don't ice my brownies so I was thinking of adding chocolate chips next time for extra yumminess!
