  1. Pre-heat oven to 350 degrees.
  2. Greas and flour 2 bread loaf pans.
  3. Blend oil, eggs, and sugar.
  4. Add cinnamon, vanilla, baking powder, and baking soda.
  5. Fold in flour, and zucchini.
  6. Add nuts.
  7. Bake for 1 hour.

This is indeed a great bread and an easy one to put together too once the zucchini's chopped;) We enjoy this one once in a while!
