I was looking for a good zucchini bread recipe. I tried this one and it was perfect. I tweaked it a bit to our tastes by using only 1 c white sugar and 1/8 c brown sugar, packed. I also added a whole 2.25 pkg. of walnut pieces and I baked it a full hour. It was beautifully golden brown and the texture was wonderful. Thank you so much for sharing this recipe. It will be the one I always use from now on.

  1. Preheat oven to 325.
  2. Grease and flour 8 x 4 inch pan.
  3. Beat eggs, oil, vanilla and sugar together in a large bowl until creamy.
  4. Add flour, salt, baking powder, baking soda and cinnamon. Beat well.
  5. Stir in zucchini and nuts until well combined.
  6. Pour into prepared pan.
  7. Bake 40-60 minutes. Tester inserted in center should come out clean.
  8. Cool in pan on rack for 20 minutes.
  9. Remove bread from pan and completely cool.
