Zucchini Bread

ingredients
- 3 eggs
- 1 cup vegetable oil
- 1 cup white sugar
- 1 cup brown sugar
- 2 cups grated zucchini (skin on)
- 2 cups flour
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon baking powder
- 2 teaspoons baking soda
- 1 tablespoon cinnamon
- 1 tablespoon vanilla
- 1 cup chopped walnuts
directions
- In a large bowl, combine all ingredients and mix with electric mixer until well blended.
- Can be put into 2 loaf pans or 1 Bundt pan.
- Bake at 325 degrees for 1 hour for the loaf pans and 1 hour 25 minute.

Excellent recipe, first loaf is all but gone. Fortunately I made two! Didn't have any nuts on hand, but I did have a mason jar full of dehydrated banana slices from some organic bananas a local store was getting ready to throw out. I took them home and froze half, dehydrated half. The moisture from the zucchini was perfect for hydrating the bananas during cooking. I just mixed them into the batter in whole slices while sill dehydrated and let the juice do the work. Other than that, I left the recipe alone.

AWESOME!!! I made this to take to my massage therapy class and they all fell in love. I prepared just as recipe is. Very simple and quick!! I made it in a bundt pan. OH that smell while it was baking was so wonderful. I have enough to make another tonight, since there was none to bring home. Will make this often!!! Thank you.
