  • In a large bowl, combine all ingredients and mix with electric mixer until well blended.
  • Can be put into 2 loaf pans or 1 Bundt pan.
  • Bake at 325 degrees for 1 hour for the loaf pans and 1 hour 25 minute.
  • for the Bundt pan.

  1. Excellent recipe, first loaf is all but gone. Fortunately I made two! Didn't have any nuts on hand, but I did have a mason jar full of dehydrated banana slices from some organic bananas a local store was getting ready to throw out. I took them home and froze half, dehydrated half. The moisture from the zucchini was perfect for hydrating the bananas during cooking. I just mixed them into the batter in whole slices while sill dehydrated and let the juice do the work. Other than that, I left the recipe alone.

  2. This recipe is wonderful! Very tasty and moist. I doubled the recipe and had 2 reg. size loaves and 7 small ones. I cooked the small ones 42 mins. Very Good!!
     
  3. Great recipe! I loved it, especially with the brown sugar, which, I believe takes it to a whole new level. I added a bit more zucchini then suggested, and it came out perfectly. :) (3 cups) Very moist, and very good with the brown sugar. Thanks for posting!
     
  4. I loved the dark color of this bread,so I thought I had better try it.And the people I work with were glad I did.It is wonderful and very moist.I did add about 1/8 C molasses to give it a mellow flavor.I also used 1C whole wheat flour and 1C white flour. Delish!!!! thanx for sharing!!!!
     
  5. AWESOME!!! I made this to take to my massage therapy class and they all fell in love. I prepared just as recipe is. Very simple and quick!! I made it in a bundt pan. OH that smell while it was baking was so wonderful. I have enough to make another tonight, since there was none to bring home. Will make this often!!! Thank you.

  1. Excellent taste and texture....I substituted spenda white and a fake brown sugar for the sugars...not sure if that affected volumn, but I only got one loaf out of the recipe...but what a loaf...yum yum. Thanks for sharing.
