The traditional Zucchini bread that was made when I was younger just replace the sugar with splenda.

Directions

  1. Pre-heat oven 325 Degrees.
  2. Cream eggs and Splenda.
  3. Add oil, Zucchini and vanilla. Sift in remaining ingredients.
  4. Pour into two greased loaf pans.
  5. Bake at 325 degrees for 1 hour.
