Zucchini Bread

"Mom's recipe for zucchini bread. Once baked this freezes well to be used as gifts at Christmas time."

• Yields: 2 loaves

ingredients

• 3 eggs
• 1 cup oil
• 1 1⁄2 cups sugar
• 2 cups zucchini (peeled and grated)
• 3 teaspoons vanilla
• 2 cups flour
• 2 teaspoons cinnamon
• 1⁄4 teaspoon baking powder
• 1 teaspoon salt
• 1 teaspoon baking soda
• 1⁄2 cup nuts (optional)

directions

1. Beat eggs until light and foamy, add oil, surgar, zucchini and vanilla. Add flour, salt, soda, baking powder and cinnamon. Mix until blended. Add nuts. Divide into 2 loaf pans. Bake 325 degrees for 1 hour.
