- 177.44 ml oil
- 236.59 ml sugar
- 177.44 ml molasses
- 9.85 ml vanilla
- 2 eggs
- 59.14 ml egg white
- 236.59 ml unsweetened applesauce
- 236.59 ml all-purpose flour
- 236.59 ml oat bran
- 354.88 ml flax seed meal (I prefer golden flax)
- 236.59 ml whole wheat pastry flour
- 7.39 ml salt
- 9.85 ml baking powder
- 7.39 ml baking soda
- 19.71 ml cinnamon
- 2.46 ml nutmeg
- 1.23 ml ground cloves
- 2.46 ml allspice
- 1104.16 ml zucchini, shredded (or carrots)
- 236.59 ml walnuts, broken in small pieces
directions
- Cream together oil, molasses, and sugar.
- Slowly beat in vanilla and eggs, then applesauce.
- In a speparate bowl, sift together the dry ingredients.
- Add to the oil-sugar mixture, stirring to combine.
- Add zucchini (or carrots) and walnuts.
- Pour into greased oversixzed muffin tins. Bake in preheated oven at 350 degrees for 25 to 30 minutes.
