Too easy and too good. Love that it has only a few, fresh ingredients. I get tired of everything having a can of condensed soup in it! I served with a dollop of sour cream on each serving. Yum!

Your MIL did you a favour sending you this recipe NurseDi!! I though the onion would be undercooked somewhat and it was!! But that helped make the dish fantastic. All the veggies were firm and flavourful. Not mushy and soggy!! So bring on the Zucchini. . . I know what to do with them!!

This is great! I zipped it up a little with garlic salt but will try Carole's whole garlic next time. I like that the veggies stay crisp.

Oh, Nurse Di-you've done it again! My husband and I are on the South Beach Diet and this recipe is just perfect. We loved the flavor and it is so easy to prepare. I had some whole garlic so I put the biggest cloves in too and it was so-o-o good. Thanks, Carole in Orlando

Simple, quick and delicious. My 18month old chased me around the kitchen asking for more. Truly a keeper, especially for when zucchini is in season. I'm going to try the same recipe for dinner but with some winter squash added.

Very good, but the veggies at the bottom were a little soggy (but that could have been my fault!!) Amazingly good flavor though. I was skeptical because of the few ingredients, but it was very flavorful... The addition of sliced mushrooms really makes the dish!

This is very nice. I have lots more zukes, fresh mushrooms and will make it again tomorrow, using a little more salt. It's definitely a keeper

A nice way to prepare zucchini. I'm on South Beach and made this aside of a tuna steak. Thinking I would like the veggies sauteed a bit beforehand, I did saute the veggies stovetop in olive oil until tender-crisp before putting it in the oven; though I wish I wouldn't have because the zucchini turned out mushy and the casserole itself was a bit greasy with the combination of olive oil and cheese, though still tasty. I did add a 1/4 tsp of garlic salt. Next time I will just follow the directions and prepare and bake it according to your directions.

A very healthy dish. The taste was a little bland, so next time I'll try adding more seasoning maybe garlic salt. Thanks for the recipe.

Wow what can I say. This is a fantastic recipe. Quick, easy and fresh tasting. I only made one serving for myself for lunch and wish I had made more. This is a wonderful lo-calorie recipe and I can't wait to make it again. Thanks Nurse Di!

This is fantastic. My leery-of-zucchini DH enjoyed it too! I served with New York Strips & stuffed mushrooms - YUM. This dish is flavorful and fresh-tasting, and the little bit of cheese is really all you need. Thanks - I'll be making this again.

This is a really good zucchini recipe. I like to serve it with grilled meat since it has such a fresh flavor.

It's difficult to get my husband to eat his veggies sometimes, but he liked this one. Well, he liked the melted cheese more than the veggies itself, but at least he ate some! I thought it was pretty good for such an easy-to-put-together dish!

Nurse Di, this is low carb heaven! I picked up some zucchini at a local farmers market and knew this would be the perfect recipe to use it in! I didn't change anything in this recipe, except to add a few healthy pinches of cajun seasoning! This is a perfect side dish, or a vegetarian main dish! I will surely make this often in the summer when zucchini is at it's peak!
