Zesty Stir-fried Beef With Vegetables

  1. Combine first 3 ingredients (soy sauce- garlic) in a large bowl. Add beef strips. Cover and marinate at least one hour at room temp or overnight in the refrigerator.
  2. Drain beef, reserving marinade.
  3. Heat oil in large skillet or wok over high heat. Add beef and stir fry 2 minutes. Remove and set aside.
  4. Add vegetables and remaining ingredients to red pepper flakes (brocolli-red pepper flakes) to skillet and cook 2 minutes.
  5. Dissolve cornstarch in water.
  6. Stir marinade and cornstarch mixture into skillet. Cook for 4-6 more minutes or until vegetables are crisp-tender and sauce thickens.
  7. Return beef to skillet and cook an additional 1-2 minutes.
  8. Serve over rice or noodles.

When I launch my own thesaurus Ellie, the entry against amazing will read as Ellie's Zesty Stir-fried Beef With Vegetables. We really have not had such a wonderful pasta meal in a long time. I served it on spaghetti. I have to concede that I used roast meat cut into strips as I had it ready and omitted the broccoli as could not go to the market due to the rains. Used the carrots and mushrooms but not the almonds as DH does not like nuts in his main meal. I cannot wait to make this again with tender meat(for stir frying) and broccoli. I also subbed sherry wine vinegar for the sherry wine (not avlbl)(I did add the marinade ingredients ofcourse) and used only a tblsp of oil as the cooked beef was added only at the end. DH and DS both agreed with me ofcourse that it was one hell of a meal. Thank you Ellie! :) Fay
