When I make egg salad I always think it's quite boring; not anymore! From Recipe4Living.com.
- 3 eggs, hard-cooked
- 3 tablespoons mayonnaise
- 1 tablespoon prepared mustard
- 1⁄8 teaspoon salt
- 1⁄8 teaspoon pepper
- 1⁄8 teaspoon lemon juice
- 1 tablespoon green onion, minced
- In a small bowl, combine mayonnaise, mustard, salt, pepper, and lemon juice.
- Stir in eggs with a fork, chopping them into bite-size pieces.
- Add green onion.

Yummy! This is pretty much how I make my egg salad, but I don't use quite that much mustard. I really enjoyed it with the extra mustard and the lemon juice. This made great snadwiches. Thanx for posting!
