Zesty Cheese Soup

- 226.79 g can corn, drained
- 425.24 g can pinto beans, rinsed and drained (you can use chili beans instead if you want)
- 396.89 g can chicken broth
- 226.79 g can rotel, undrained
- 283.49 g canned chicken, drained (or you can use 1-1/2 cups cooked chicken)
- 453.59 g Velveeta cheese, cubed
directions
- Combine all ingredients in a 3-qt. saucepan.
- Cook and stir until the cheese is melted.
- Garnish with sour cream and/or tortilla chips if desired.
- If you want you can also put cottage cheese on top instead of the sour cream which will give you that sour cream sensation without the fat.

I live in TX with my husband, Tim and mischevious cat, Penelope :) I work at a small bookstore for a non profit organzation -- not really what I want to do for the rest of my life, but I feel that I am where I should be at this moment in my life.
