  1. Preheat oven to 400. Pierce potatoes several times with a fork. Bake until tender, about an hour. Melt butter over medium heat. Add peppers and onion; saute until tender. Add ham and saute for another 5 minutes. Reduce temperature to 350. Cool potatoes slightly. Slice tops off of potatoes and scoop out the pulp; reserve the skins. Mash pulp. Stir in 1 cup colby cheese, milk, sour cream and vegetable mixture. Spoon into potato shells. Sprinkle potatoes with remaining cheese and back until heated through, about 20 minutes.
