Scallion mayonnaise
- 236.59 ml prepared mayonnaise
- 14.79 ml Dijon mustard
- 3 scallions, thinly sliced
- 4.92 ml fresh lemon juice
- salt and pepper

Burger and Toppings
- 907.18 g ground rib eye steaks
- salt and pepper
- 226.79 g crumbled blue cheese
- 8 slice thick-cut applewood-smoked bacon, cooked until crisp
- 226.79 g caramelized onions
- 113.39 g Baby Spinach
- 8 slice roma tomatoes
- 4 buns, toasted (pretzel buns preferred and recipes on food.com)
- 28.34 g scallion mayonnaise
directions
- For mayonnaise: Combine all ingredients in a small bowl and season with salt and pepper to taste.
- For burger: Season meat with salt and pepper and form into four patties.
- Make a depression in the center of each patty with your thumb so burger will keep its shape better while cooking. Grill burgers until desired degree of doneness. Top with blue cheese, bacon, caramelized onions, sliced tomato, and baby spinach. Serve with scallion mayonnaise.
