I do all our home canning and this recipe is geared towards using those jars! I am able to use canned tomatoes and black beans so the ingredients will reflect either pints or quarts for measurements. This recipe freezes well.
- 1 lb ground beef
- 1 large onion, chopped
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1⁄8 teaspoon cayenne, add more if you like
- 1 quart homecanned tomatoes
- 1 quart black beans or 1 quart beans, of your choice
- 3⁄4 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon sugar
- In large saucepan brown beef and onion until meat is done. Drain.
- Add remaining ingredients. Simmer for 20 minutes until heated through and slightly thickened.
- Serve with shredded cheese, sour cream and tortilla chips if desired.
Made this for dinner after a very busy day. It went together quickly and easily. I do not can, so I used organic canned tomatoes instead. This is the first time I have used black beans in a chili. I normally do not like them, but chose this recipe for my daughter who loves them. She was very happy, and I was pleasantly surprised, even with black beans it was delicious. The only person in the family who did not care for the recipe was DH...he said it had to much tomato.

This is a definate 5 star recipe due to the great flavor and taste.There are only 4 of us, but I decided to make the full recipe due to the fact that we are snowed in. Bought a couple cups to my neighbors too. I only had Pork and Beans on hand so thats what I used. I added an extra teaspoon of chili powder, and went with 1/2 teaspoon of salt. Served with tortilla chips, and sour cream. This is a definate yes for chili lovers. Made for Recipe Swap 36.
This was a very enjoyable mid week meal. It s a good recipe as it uses mostly things on hand except for the black beans. I have not seen them here in tins so subbed with kidney beans which was great. I served this with avocado and cheese on top.
