- 1⁄2 lb roma tomato, 1/4-inch dice
- 1⁄2 cup red onion, finely diced
- 1⁄2 ounce cilantro, finely chopped
- 1 lime
- 1⁄4 cup olive oil
- 1 teaspoon kosher salt
- 1 avocado, 1/2-inch dice
- 2 cups iceberg lettuce, shredded
- 1 cup black beans, cold
- 1⁄4 cup ranch dressing
- Add 1st 6 ingredients in large stainless steel bowl. Mix well with a rubber spatula.
- Add avocado and mix well.
- Add shredded iceberg and ranch dressing. Mix well and serve immediately to say fresh and crispy.
Love this salad - have been making it for years since I lived in AZ and Z'Tejas was one of my favorite restaurants! Thanks for posting the recipe.
