Yummy Zesty Zucchini Wrap

"A friend of mine just told me about this recipe, she makes it all the time. I am a guacaholic and its a great way to use green and yellow zucchini. Use your favorite guacamole recipe. You can add some favorite spices to the cooking, or Italian dressing to the wrap if you want. Its adaptable :) Serve with Sweet Potato Fries as a main dish, or just have as a sandwich. Cooking time does not include making your own guacamole, which i usually do, or buy premade."

  • Heat olive oil in a pan.
  • Add sliced zucchini, bell pepper and onion.
  • Sauté approximately 10 minutes until done to your taste. Add salt and pepper.
  • Spread 2 tbs guacamole on flour tortilla, or more if you are like me :).
  • Add cooked veggies to the tortilla, spinach and sliced cherry tomatoes if using.
  • Wrap and serve either hot or cold.

  1. Mmmm....this is a really tasty wrap. I wasn't expecting to like near as much as we did. I didn't have spinach, so I substituted a little shredded lettuce and alfalfa sprouts. I made my own guac. and used a little bit more lemon to that than I normally would to give it a little more zing. I cooked the veggies to tender crisp So, so good and satisfying. Thanks for shraring the keeper.

We SO enjoyed these for a light meal after a hot day! :) Except for using pita bread instead of tortillas, adding some minced garlic towards the end of step 3 and some fresh basil just before serving, I made these exactly to the recipe. Adore all these ingredients and they came together SO beautifully in these yummy wraps which we ate with the mix of warm vegetables with the other ingredients at room temperature. Thanks for sharing another super recipe!
     
  4. There is nothing not to like about this recipe. I used my garden zucchini and peppers :) and store bought guacamole. Added sliced tomatoes and red onion (only used about a fourth of an onion). Loved the addition of the baby spinach. We really enjoyed this for a light dinner tonight. Thanks Marra for a great recipe. Made for Gimme 5 Tag Game :)
     
  5. Oh so, let me count the Ohs. Oh sooo healthy, oh so yummy, oh so easy, and oh so filling. Picked this because we need a quick healthy dinner. Was pleasantly surprised at how well this came together, how well we liked it and most of all how filling this was. I have to confess we did add 1 slice of fat free jack cheese to each and in place of flour tortillas used LaTortilla Factory Multi Grain and Olive Oil Soft Wraps. Was so inspired by this that I made a raw one (just uncooked veggies) to take to work for lunch and that was really yummy also. Will be making aging. Thanks so much for the post.

  2. What a great veggie wrap! I left out the onions, and I had a green bell pepper that needed to be used so I used that instead of red, otherwise made as specified. I enjoyed the addition of spinach instead of lettuce. So easy, light and fresh - thanks for posting this recipe!

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
