- 1 tablespoon sunflower oil
- 1 large red onion, chopped
- 1 celery rib, chopped
- 1 teaspoon cayenne pepper
- 1 teaspoon cumin seed
- 1 tablespoon smoked paprika
- 1 kg minced beef
- 400 g adzuki beans
- 400 g pinto beans
- 400 g canned tomatoes
- 600 ml beef stock
- 2 dark chocolate squares
- 300 g long grain rice
- 120 g cheddar cheese, grated
directions
- Heat the oil in a large pan and cook the onion, celery and garlic for 5 mins until softened. Add the cayenne, cummin seeds and paprika and cook for one more minute.
- Stir in the beef , beans , tomatoes and stock. Bring to the boil and simmer gently for 1 hour. In the last 15 minutes cook your rice. Stir in the chocolate and check the seasoning.
- Serve ontop of rice and sprinkled with cheese.
