Yummy, Spicy Black Beans and Rice

"This a delicious quick fix when I have no meat in the house, and can't find anything to eat. I keep all of the ingredients on hand. Give it a try!!! *Note* This recipe is very forgiving feel free to substitute!!! (I use whatever is on hand)"

  • Heat oil in large skillet over med-high heat.
  • Add onions and peppers and saute until onions are soft and translucent.
  • Add garlic, cumin, chili powder, cayenne pepper, oregano, salt, tomato paste. Cook for about 2 minutes, or until fragrant.
  • Add black beans, mix to combine. Add chicken broth.
  • Bring to a boil, then lower heat and simmer about 20 minutes or until most of liquid has been absorbed.
  • Serve over rice topped with a dollop of low-fat sour cream, shredded cheddar cheese, and chopped green onions. YUM!

  1. This was really easy to do. I used the ketchup (which I never would have thought of using!). I also used the tomatoes. I added cooked brown rice - stirred it in. Not sure if anyone was really excited about it, because there was a lot left, but I think it was pretty good.
     
  2. Sorry, but didn't care too much for this. It was okay, but as written has too much spice. I'm not talking about heat, but I feel like I'm just eating spices with a few other things thrown in...too overpowering. I used a can of tomatoes and used the paste; left out the salt. Would cut down the spices if I made again, but probably won't. Sorry!
     
  3. This was very good. I took a picture and then my memory card went kaput so I will have to take one next time! I did double the garlic, put in two tablespoons of chili powder and skipped the cayenne altogether as I just wasn't in the mood for my mouth to burn. I skipped the salt (I always do), used tomato paste and a can of diced tomatoes. I also added some corn for additional colour and texture. This is a nice and simple meatless dish that we will be having again. Thanks for posting!
     
  4. This was very good!! The texture & flavor are very good. The kids thought it was too hot & spicy (I used 1/2 tsp cayenne). I used beans I cooked up myself - 1c dried. A nice easy recipe! Please use tomato paste instead of the ketchup; they are very different products! Made for My 3 Chefs 6/08.
